Uses:  PGPR as an emulsifier, stabiliser allowing chocolate coating to be spread more thinly to save costs. This is done at the expense of cocoa butter, which is eliminated from certain chocolate, namely Hershey’s, and PGPR used instead.


It is also used in spreadable fats and spreads, creamers and dressings of various kinds, where a plastic viscosity is desired in the products. Technically speaking, PGPR is a plastic


There is a possible link to hyperactivity in children; and a concern that it might change offspring sex ratio. There is also a possible danger, that if consumed in high enough amounts, it could cause miscarriage, due to castor oil content.


Ingestion may cause gastrointestinal irritation, nausea, vomiting and diarrhoea.


The product also causes Hepatomegaly in rats. See E442, E492 and E322

Description: Polyglycerol Polyricinoleate or PGPR is a combination of polyglycerol and castor oil (oil of the Ricinus communis tree). Normal fat consists of glycerol and fatty acids, for these products additional glycerol is coupled to the normal glycerol.


The product generally is a mixture of different components but has a certain element as synthetic as it uses an acetone-benzene solution. See E210 Also, the fatty acids are washed with potassium hydroxide and extracted using petroleum.

Polyglycerol Polyricinoleate (PGPR) is becoming increasingly popular in Chocolate bars from the lower end market and are sold in bulk to offload costs.


Polyglycerol is also used in polymer coatings, paint and as a coating for plastic film to aid in anti-fogging.
