Uses:  Calcium Stearoyl-2-Lactylate is used as a conditioner in dehydrated potatoes (instant mashed potatoes) and helps to prevent staling in bread.


As a dough conditioner; stabiliser and whipping agent, emulsifying agent in salad dressings (including French dressing), soups, non dairy creamers, cream liqueur drinks.


The stearic acid and/or the lactic acid from which Sodium stearoyl-2-lactylate is produced could be of animal origin, and so therefore may not be suitable for vegetarians and some religious groups


Description: Calcium Stearoyl-2-Lactylate is a flour treatment stabiliser, emulsifier to make it able to retain shape after going through the machinery.


Similar to E481 but with calcium as the added mineral instead of sodium. Lactic acid in commercial food is produced either by chemical synthesis or from bacterial fermentation of a carbohydrate such as corn sugar.


It is considered safe for a milk allergic individual.
